Salmon with lemon and herb crust, and the Foodie Blogroll

I try to cook fish or seafood twice a week. Salmon is always a good choice because they are so easy and quick to cook, either grilled, baked or in a pie or pasta dish. Here's something we had earlier this week, baked salmon with a lemon and herb crust served with buttered new potatoes and steamed vegetables. Another healthy meal to make up for the post-Christmas guilt.

Salmon with lemon and herb crust

Ingredients (serves 2):
Two salmon fillets
100g breadcrumbs
1 tbsp olive oil
Juice and zest of half a lemon
A handful of fresh parsley and chives, finely chopped
Salt and pepper

Lightly grease a baking or roasting tray and preheat the oven to 190 C/gas mark 5. Mix the breadcrumbs and all other ingredients (except the salmon) in a bowl and season with salt and pepper. Place the mixture on top of the salmon fillets, pressing slightly to make sure it all sticks and stays on. Cook the salmon in the oven for 15-20 minutes until the breadcrumbs are nicely crisp and golden.
